  1. Had the Ginger Pork Chops with the spiced beans. I loved the Beans and so did Nathan. I caught him in the kitchen (when dinner was over) eating with a spoon out of the pan! Truth be told..I'm not a fan of pork chops- But I could taste the ginger and lemongrass. YUM!!! Kids gobbled up the pork chops! Great cut of meat with the chops, nice and thick!

  2. I will remember your not a fan of pork chops, but if the kids ate them up than that is more than half the battle. I used almost every kind of bean there is in that bean mix lol. I was a little nervous no one would like it.\\

  3. We had the Southwestern Turkey Burgers and we all LOVED them...the sauce was perfectly spicy for Jon and I!!! I served chips and guac and a side salad to make the meal complete and overall it was a hit! Enjoyed the fajitas tonight actually and they were pretty good...the kids ate them except for the peppers and onions (which they're not crazy about yet)...It has been so nice not to have to think much about dinner! LOVING IT!

  4. I brought the Sausage Florentine bake with me to my mother in- laws for dinner. Everyone loved it! It was so nice that I could bring a homemade dinner over and did not have to spend the afternoon getting the meal ready. Fully thawed it only took an hour to cook. So make sure you check it after and hour.

  5. Fajitas were great,even had left overs for the next day. I went to the Twins game last night with some friends and I took out the Southwestern burgers for Nathan and the kids. So not sure how they tasted, but there was no left overs (good sign)! It was so nice I did not have to prepare dinner- I could just take a meal out to thaw, and the hubby could come home from work and get dinner ready. GO TWINS!!!

  6. we had the Ham and Cheese Bread bake...everyone loved it (had to "scrape" a few onions off for the kids). It was perfect as we have football three nights a week...easy to have on those busy nights. YUM! Kim

  8. The pork adobo was wonderful. I topped it off with tomatoes,cilantro,and goat cheese! OMGosh so good. The kids and I kept warming up the tortilla's in the microwave and just eating them! Nathan made his into a taco. Very filling and great tasting meal!!!

  9. We have had the Sausage Florentine, Turkey Burgers and Fajias. Chris and I really liked the Sausage Florentine. It was nice to have left overs to bring to work for lunch. Kids tried it and thought so so. Also, we loved the turkey burgers - Matthew's favorite. We also had the Fajitas - which we all ate, the kids w/o the peppers and onions. It is nice to get feedback on the recipies. I am always a little nervous about mine! Deb

  10. So far we have had the glazed salmon, which I overcooked :( Lucky for my hubby, he was eating later, so I didn't cook his till he was ready and his were great. The Turkey burgers we loved, And the panini sandwich which we really liked too. The kids were all hit and miss, but that is normal for them anyway. I just make them try it.

  11. Calzones were great! Cooked to prefection. No leftovers, children asking for more! We had the meatloaf tonight. I think I made the loaf too big, it took 2 hours to cook.You could really make two loafs out of what we had. So for us, it took awhile to cook and the bread in the loaf got too soggy.So I messed up the meat loaf a bit, but we still scarfed it down :-)

I drew up a September menu for every night that I knew we would be home - I have always wanted to do this but have been overwhelmed in the past by the prospect of coming up with all those meals...this time I just copied and pasted from the list on the blog, and filled in the other dates with other things we normally have. I can't even begin to describe the peace this gives me. When we made the sausage florentine - our first one - I didn't know what to do with myself, so I mixed up a cake and put it in the oven once the meal came out, and I also had time to pack lunches for the next day. We've had most of the stuff on the list, and the kids at least tried all of it. They have an aversion to onions, but there's been a relatively positive reaction to every single meal so far. I love that we are trying new food. I'm learning that I've got our freezer set too low, so I've adjusted that - it was taking a very long time for foods to thaw, which meant I had to cook things longer - not always the best method. So I'm now taking things out of the freezer two days ahead of time (and since I know what we're having two days out, I can do this without thinking about it!). Sooo....so far, so good. Thanks, everybody! - Jill

    PS - we cooked the meatloaf in a muffin tin because we were short on time - that worked great! My son was adamant that he wasn't going to try it, even though he typically loves meatloaf, but once he did, he loved it.

  13. We had company over, 6 adults and 2 kids. Made the Panni loaf and sweet potato fries. Everyone loved the Loaf.After cooking for 20 mins I opend the loaf up and put it on broil for a few mins just to really cook the cheese. I seasoned the fries with sea salt. Awesome meal. I had no prep time or clean up with the meal, we could just spend our time visiting with friends. Wonderful meal.
